Start with his short stories (esp. metamorphosis, a hunger artist, in the penal colony, a country doctor, the judgment, description of a struggle, investigations of a dog) and if you get the right one, it will come with a couple dozen of his aphorisms, which are all p good feels in and of themselves. For novels (he wrote 3 and never 'completely' finished any of them) most would first direct people toward The Trial, but personally The Castle is my favorite.

For short stories, I recommend Michael Hofmann as a translator. The edition of the old Muir translations from Schocken is ok for getting some more of the shorter stories and aphorisms, however their translations were.... more optimistic (in some ways abrahamicized, not the content but some of his description; the old Muirs were Jewish) and just less dismal/paranoid than what later and more sophisticated translations of Kafka paint him to be. For The Castle (and Amerika, should you continue) I recommend Mark Harmon as a translator.
